The history of kebab, which began when humankind discovered fire and started cooking meat over it, offers us the first clues about this cooking style, which is now most commonly associated with Turkish cuisine. Although kebab essentially means cooking meat over fire, today “kebab” represents a culture in its own right.
Kebab, the first dish that comes to mind when Turkish cuisine is mentioned around the world, is made by cooking meat or minced meat threaded onto skewers over charcoal or wood fire. Kebab has many varieties and encompasses numerous recipes and traditions that differ from one city to another.
The word “kebab,” which entered our language from Arabic, derives from the root “kebuba,” meaning “to roast or cook over hot coals.” Made in Anatolia for more than a thousand years, kebab originated in Southeastern Anatolia and the Eastern Mediterranean. Gaziantep, Şanlıurfa, Adana, and Mersin rank among the leading cities when it comes to kebab. Each of these cities has its own way of preparing and serving kebab, and they have maintained a friendly rivalry for centuries.
Throughout the long period extending from Seljuk cuisine to the Ottoman palace cuisine, kebab was always present in palace kitchens. Tandoori kebab, lamb kebab, tas kebab, and shish kebab were among the favorite dishes of many Ottoman sultans. Döner kebab, known simply as döner, has made Turkish cuisine famous throughout the world.
Grinding minced meat with a traditional zırh knife, blending it with various spices as well as black pepper and salt, placing it on skewers, and cooking it is a craft that requires considerable expertise. Kebab is served with many vegetables, particularly tomatoes, onions, peppers, and eggplants, and may also be accompanied by a variety of salads.
In addition, kebab is prepared with many vegetables, especially eggplant, tomato, and onion. Kebab masters, who frequently state that the best kebab is made from lamb, also insist that the meat must be minced with a zırh knife.
Before kebab meat is prepared, it must be trimmed of fat and sinew and specially marinated. Ensuring that no offal is added to the meat is also one of the essential requirements for producing a good kebab.
